Island Treats: Mini Cheese Cakes

Lady Le-Strange Tudor’s Butler makes mini cheese cakes with apricot jam and kiwi fruit a random pagan holiday in the spring. He has fun experimenting with different fruit toppings.


  • 2 (8 ounce) packages of cream cheese
  • 1/2 cup sugar
  • 2 eggs
  • 1/2 tsp. vanilla
  • 1 can of cherry pie filling
  • 1 package of vanilla wafers

Directions: Soften cream cheese. Add sugar, eggs, vanilla. Beat until smooth. Line mini cupcake tins with small paper cups. Fit one wafer at bottom or fill bottom with a graham cracker crust. Fill 3/4 full with filling. Bake at 375 degrees for 15 minutes.

Cool. Top with cherry pie filling or slices of kiwi and small dabs of apricot jam.
