Ms. Peacock makes mini cheese cakes with apricot jam and kiwi fruit for Easter. She has fun experimenting with different fruit toppings.
- 2 (8 ounce) packages of cream cheese
- 1/2 cup sugar
- 2 eggs
- 1/2 tsp. vanilla
- 1 can of cherry pie filling
- 1 package of vanilla wafers
Directions: Soften cream cheese. Add sugar, eggs, vanilla. Beat until smooth. Line mini cupcake tins with small paper cups. Fit one wafer at bottom or fill bottom with a graham cracker crust. Fill 3/4 full with filling. Bake at 375 degrees for 15 minutes.
Cool. Top with cherry pie filling or slices of kiwi and small dabs of apricot jam.
